The French Nutrionist's Pumpkin Brownies

Gluten Free, Vegan, Paleo and Dairy Free. No butter, oil, flour, grains or sugar. And just four ingredients.

Yes, we were suspicious too, but these are really tasty and just the right amount of spooky!

Ingredients

  • 1 cup pumpkin purée   
  • 1/2 cup smooth nut butter   
  • 1/4 cup cocoa powder  
  • 1 scoop of Vegan protein powder

Method

  1. Preheat the oven to 180C.
  2. Combine all your ingredients and blend until smooth.
  3. Pour brownie mixture into each muffin tin, filling until just full.  
  4. Bake for 12-15 minutes, or until a skewer/toothpick comes out just clean.   
  5. Allow to cool in the muffin tin completely.

Tips and tricks

Of course, there is nothing stopping you, accidentally, pouring a load of chocolate chips and marshmallows in to the batter before you bake it. We know that you couldn’t call them quite so healthy, but we won’t tell anyone if you don’t.
